Chocolate Mousse
A mousse is a soft

Ingredients Quantity
Chocolate 750g
Cream 1 300ml
Eggs 10
Sugar 150g
Cream 2 800ml
Gelatine 5
leaves
Method
Melt chocolate and cream1 over bain marie.
Soak gelatine in cold water.
Add gelatine to melted chocolate keep warm or will
set.
Whisk eggs and sugar to a sabayon over bain marie.
Add melted chocolate ganache to sabayon.
Whip cream 2 and fold into chocolate sabayon mix.
Serve with roasted whole hazelnuts.
