Quick Kimchi

Kimchi is Korean cuisine for traditional side dish. It is loaded with vitamins and good for boosts immunity.
Preparation time- 20 minutes
Ingredients                                           Quantity
Chinese cabbage                                      1
Garlic, cloves                                            3
Garlic piece, grated                                   2 ½ cm
Fish sauce                                                2 tbsp
Chilli sauce                                               2 tbsp
Golden Caster sugar                                1 tbsp
Rice vinegar                                              3 tbsp
Radishes, coarsely grated                        8
Carrots, coarsely grated                           2
Springs onions                                          4

1.Slice the cabbage into 2.5 cm strips. Tip into a bowl, Mix with 1 tbsp sea salt, and then set aside for 1 hour. Meanwhile, make the kimchi paste by blending the garlic, ginger, fish sauce, chilli sauce, and sugar and rice vinegar together in a small bowl.
Rinse the cabbage under cold running water, drain and dry thoroughly. Transfer to a large bowl and toss through the paste, along with the radishes, carrot and springs onions. Serve straight away or pack into a large jar, seal and leave to ferment at room temperature overnight, and then chill. Will keep in the fridge for up to 2 weeks-the flavor will improve the longer it’s left.
