Carbonara Sauce
Carbonara sauce is a
basic creamy sauce served with all types of pasta. Carbonara is generally
comprised of pancetta, egg, and yolks, heavy cream, garlic and plenty of fresh
ground black pepper.

Cooking time- 10minutes
Ingredients

Olive oil 2

Pancetta roughly chopped 200g
Cloves crushed 3
Eggs Yolks 2
Eggs (at room temperature) 2
Thickened cream
½ cup
Parmesan cheese 75g
Chicken breast sliced 200g
Method
1. Heat oil in a frying pan over medium flame. Add the
pancetta and garlic. Cook for 5 minutes until the pancetta is crisp. Drain on
paper towel.
2. Whisk eggs yolks, eggs, cream and half of the
parmesan together in a bowl. Lightly season with salt and pepper cook gently
one minute remove from heat.
3. Add egg mixture and pancetta mixture to pasta,
correct the seasoning. Toss over heat until combined. Serve with remaining
parmesan.
