Chocolate Tuiles
The French cookie is
named after traditional roof tuiles found in France and other Mediterranean locations.
Chocolate tuiles cookies make them a wonderful garnish for ice cream or other
dessert.

Ingredients Unit
Egg whites 2
Caster sugar 90g
Plain sugar 55g
Cocoa powder 0.50teaspoon
Melted butter and cooled 55g
Method
1. Pre heat the oven to 200C, Have ready a non-stick cookie sheet.
2. In the bowl, combine the ingredients egg whites and sugar lightly
beat until well blend. Stir flour and cocoa; add butter and mix just to
combine. Using a rubber spatula, fold in the flour just to incorporate.
3. Using a small offset spatula, spread the batter into circles about 2
inches in diameter and 1/8 inch thick on the prepared cookie sheet, spacing them
about 2 inches apart.
4. Bake for 10 minutes until set or shape the tuiles shape while still
hot.
