Ingredients
3 to 4 Cos lettuce leaves
Cooked bacon
1 tablespoon Olive oil
10g shaved parmesan
1 garlic cloves
Poached chicken breast
3 slice white crusty bread, crusts removed cut into 1 cm
cubes
Dressing :-
1 egg
50ml olive oil
1 tablespoon red wine vinegar
1 teaspoon Dijon
Method
1. Heat 1 teaspoon of oil in a large non-stick frying pan
over medium-high heat. Add the bacon and cook for 2 to 3 minutes until golden.
2. Heat the butter and olive oil in the pan. Add the garlic
and bread and cook for 4 to 5 minutes until golden brown.
3. For dressing, put the
egg in a saucepan of
cold water. Bring to boil over high heat. Cook for about 2 minutes. Drain the
egg and cool down for 1 minute and then crack the egg. Place the olive oil,
vinegar, mustard into the food processor and process until combined.
4. Combine the chicken, bacon, bread, lettuce, parmesan in a
bowl and serve with dressing sauce.
