Miso soup


Miso soup provides protein, vitamin B12, vitamin B2, vitamin K, choline, linoleic acid and dietary fiber.
Preparation time- 5 minutes
Cooking time- 5 minutes

Ingredients                                                    Quantity
Dashi stock                                                   4 cups
Dried seaweed                                              20g
Red miso paste                                             75g
Silken tofu cut into 2 cm cubes                     150g
Green onions, trimmed                                 3

Method

Place the dashi in a large saucepan over medium heat. Bring to the boil. Reduce heat to low. Add the seaweed and cook for 1 minutes or until seaweed softens. Add the tofu and cook for a further 1 minutes or until heated through.
Place the miso paste in a small bowl. Add a little of the dashi, stirring until miso dissolves. Add the miso mixture to the saucepan add gently stir to combine. Bring to a slimmer.
Remove from heat.
Sprinkle with green onions and serve immediately.
