Ingredients:-
1 Tablespoon Olive oil
200g prawn heads and shells
1 brown onion, finely chopped
1 small carrot, finely chopped
1 Celery stick, finely chopped
3 Large garlic cloves, finely chopped
1 Bay leaf
1L(4cups) water
80ml dry white wine
50g sachet tomato paste
150ml water
150ml cream
4 Springs fresh thyme, leaves picked
Method
Step1. Heat the oil
in a large saucepan over medium heat.
Add the reserved prawns heads and shells, and cook, stirring, for 4-5
minutes or until the shells are browned (the shells will pop and crackle loudly).
Step2. Add the onion,
carrot, celery and bay leaf, and cook stirring often, for 5 minutes or until
the onion is soft.
Step3. Add the water,
wine, tomato paste to the pan, and bring to the
boil over medium-high heat. Reduce heat to medium-low and simmer,
Add cream.
