Berry Coulis

This recipe
is one of my all time favourites. I love berries; I have made this recipe with
strawberries and raspberries. Its taste is yummy and unique.
Preparation time-5
minutes
Yield-500 millilitre
Ingredients Unit
Berries 570g
Caster sugar 25g
Cointreau orange liqueur 10ml
Lemon juice 10ml
Method
1. Hull the berries by washing them quickly
under water and them removing the green stem from the top of berries.
2. Place strawberries, raspberries, sugar,
orange liqueur and lemon juice in a food processor. Process until smooth
3. Pass the sauce through a fine strainer and
refrigerate until required.
4. Serve over ice-cream.
