How to make the churros
Step 1 To begin making the churros, we will first make the churro dough.
Combine the butter, sugar, milk in a saucepan and whisk it well. Bring to the
boil over high flame. As soon as the mixture comes to a boil, remove the sauce
pan from flame and in the flour. Place over high heat and cook, stirring
constantly, for 3 minutes until dough is smooth and coming away from the side
of the pan. Set for 5 minutes to cool.
Step 2 To make the chocolate sauce, combine all the ingredients in a saucepan
over medium-low flame, until chocolate melts and mixture is smooth.
Step 3 Combine the sugar and cinnamon on a large baking tray, transfer
the dough into bowl, and add eggs, beating well after each addition, until
mixture is smooth and glossy. Transfer to a piping bag fitted with a 2cm fluted
nozzle.
Step 4 Add enough oil to frying pan, heat until the oil reaches 170c. Pipe
three 12cm lengths of dough in to the oil, cutting the dough with kitchen
scissors. Transfer churros into paper towel. Add to the cinnamon sugar and toss
to coat.
