English muffin ½
Butter as
needed
Eggs 2
Salmon sliced 3
Sauce hollandaise 45ml
Method
1. Toast the muffin half on the sides, spread with
butter and set aside to keep warm.
2. Poach the egg in the hot water with vinegar.
3. While the egg is poaching, heat the salmon slice on
the grill, under the salamander or in a sauce pan.
4. Position the warned salmon slice on top of the
toasted muffin and place on a service plate.
5. Drain the poached eggs well and place on top of the
salmon. Ladle the sauce hollandaise over the egg, garnish and serve
immediately.
