Maderia cake is originated
from Materia islands. Maderia cake is
plain sponge cake that is signified by a dome and crack on the top. It has a
lemon favour and some sort of candied lemon garnish. It has a light texture,
and it is eaten with tea or coffee for breakfast.

Butter room temperature 180g
Caster sugar 180g
Eggs 3
Self-raising flour 255g
Milk 4tbsp
Lemon zest 1

Candied peel thin pieces 3
Method how to cook a maderia cake
1. Pre-heat the oven to 180C fan-forced. Grease a
round cake tin, put with greaseproof paper and then grease the paper.
2. Mix the butter and sugar together in a bowl with
electric mixer until pale and fluffy. After that add the eggs, 1 at a time,
beating after each addition, sift the half the flours over mixture, Fold until
just combined. Add the milk to give a mixture that falls slowly from the spoon.
Fold in the lemon zest.
3. Spoon the mixture into the prepared tin and lightly
level the top. Bake for about 50 minutes or until skewer inserted in the centre
comes out clean. Remove from the oven
and set aside to cool in the tin for 15 minutes. Turn, top side up, onto a
rack. To serve, decorate the cake with the candied peel.
