Brown pears 4
Lemon juice 1tablespoon
Vanilla bean spilt

Stock syrup enough
to cover
Method
1. In a suitable
high-sided pan, bring to the oil enough stock syrup, lemon and vanilla bean to
cover the pears.
2. Carefully peel the
pears, taking care to get a smooth surface, without bruising. Place the peeled pears into
the simmering stock and submerge them using a cartouche and a plate.
3. Bring the liquid
back to the boil and then turn down to poaching temperature. Allow to poach
until the fruit becomes tender. Test using the tip of your knife.
4. Remove the pan from the heat source and allow the
pears to cool in the syrup.
5. The pears should
be served chilled with a little of the poaching liquid.
