 Almond Orange Gluten Free Cake

Almond cake is nutritious and provides many potential health benefits, including a reduced risk of heart disease and improved blood sugar control. Almond flour is also gluten free which is great choice for those with a wheat intolerance.





Preparation time- 20 minutes

Baking time- 1 hour 45 minutes


Melted salted butter- To grease


Eggs- 5

caster sugar- 2.5 cup

Almond meal- 4 cups

Gluten- free baking flour- 2tsp

 For Orange Surup

Orange- 2

Caster sugar- 170g


1. Preheat the Oven to 170'c brush a round 220cm spring form pan with melted butter to lightly grease. Line base with non- stick baking paper.

2. Place the orange in a saucepan and cover with cold water bring to the boil over medium heat. Cook for 20 minutes or until tender. Drain. return to pan and cover with cold water. Bring to boil and cook for 20 minutes.Refresh under cold water. Drain. Coarsely chop oranges. Remove the seeds.

3. Place the orange into food processor and process until smooth.

4. Beater to whisk the eggs and sugar in a bowl until thick and pale. Add the oranges, almond meal and baking powder and gently fold until just combined. Pour into prepared pan.

5.Bake for 1 hour or until skewer inserted into the center comes out clean. Set aside for 20 minutes to cool.

6. To make the orange syrup, use a zester to remove the remove the rind from the orange.Use a small knife to remove white pith. Cut rind into thin strips.

7.Place rind in a saucepan of boiling water and cook for 10 minutes.  Drain and return to pan with orange juice and sugar. place over low heat and cook stirring for 3 minutes until the sugar dissolves and the syrup thickens.

8.Turn cake on to serving plate. Use a skewer to gently prick the top. Spoon over syrup.
