Capsicum Soup





What I think about the capsicum:- Capsicum the pepper is a genus of flowering plants in the nightshade Solanaceae. It is species are native to America have been cultivated for thousands of years.
Capsicum is source of vitamin A and C capsicum more than green one. It is also good source of fiber, vitamin E, Folate. Green capsicum has less sugar than other capsicum.
We can eat Capsicum with stuff herbs and meat roast and use the smoky fresh in dips.
Capsicum has different colour such as red, green, yellow. In the market they are sold by different colour and price.
They are nearly same like hot chili but difference is that they are large in size and it is sweetness.
Capsicum soup is an ideal choice to help you for lose weight because it is contain 100 calories or less per serving. It is contain lots of fiber and energy. You can have soup in dinner. It is especially good for vegan people.

Cooking time: - 45 minutes

Ingredients
1 tablespoon olive oil
1 large brown onion, chopped
2 garlic cloves, crushed
500g Sebago potatoes, peeled, chopped
270g char grilled capsicum, drained, chopped
4 medium tomatoes, chopped
3 cups Campbell’s real stock chicken
¼ cup fresh coriander leaves

Method
1. Heat oil in a large Saucepan over medium-high heat. Add onion and garlic. Cook and stirring, for 3 minutes or until onion has softened and then add capsicum, tomato and potato and  Cook, stirring, for 5 minutes.


2. Add stock and season with pepper. Cover it and bring to the boil. Reduce heat to medium-low. Simmer for 15 to 20 minutes or until potato is tender, and aside for 5 minutes to cool slightly.
3. Add coriander and blend it in batches, until smooth.
