Nicoise Salad


Nicoise salad is usually consists of olives, tomatoes, anchovies, tuna and green vegetable. It is full of protein, fiber and iron which is good for immune system and weight loss.

Serve – 5 portions

Ingredients                                                             Quantity
Washed potatoes, chats                                            250g
Green beans, trimmed                                               200g
Tomatoes, peeled                                                      4
Tinned tuna, flaked and drained                                110g
Wine vinegar                                                             110ml
Olive oil                                                                     200ml
Garlic, crushed                                                          4 cloves
Pepper and salt                                                         to taste
Black olives                                                               90g
Anchovy fillets                                                           5
Capers                                                                      30g
Butter lettuce, washed                                              5 leaves
Parsley, chopped                                                      25g
Method
1. Boil the potatoes in their skins in salted water, drain, and allow cooling. Peel the potatoes and cut them into 1.5 cm cubes.
2. Trim, blanch and refresh and drain the beans. Cut each peeled tomato into 8 wedges.
3. Make a garlic dressing using the olive oil, vinegar, pepper and salt. To serve, lay the washed lettuce on a platter, arrange a layer of potato. Then beans, tuna and finish with tomato wedges
4. Moisten with garlic dressing and dress with olives, capers and anchovy fillets, sprinkle with chopped parsley and serve.

The ingredients in the body of this salad can be mixed together or layered as a composed salad. The instructions below are for a composed salad.
Fresh seared tunas can be substituted for the tinned tuna if desired.
Some cooks like to add quartered hard boiled eggs to the recipe.
