Rolled rib of lamb
with bacon stuffing

Ingredients
1 rib of lamb, boned
and barded in own fat
1 tablespoon salt
Pepper according to taste
Stuffing
125 g bacon, coarsely
chopped
1 onion, chopped
1 clove garlic,
crushed
90g spinach, blanched
and coarsely chopped
Freshly ground black
pepper to taste grated
Nutmeg to taste
Method
First prepare the stuffing, fry bacon in a
heavy-based saucepan until crisp, add onion and garlic and sauté until onion is
translucent, add spinach and season with salt, pepper and nutmeg.
To prepare the meat,
spoon stuffing over inside of meat, leaving 2cm clear around the edges. Roll up
meat in reserved lamb fat and truss with string.
Season with salt and
pepper and place on the rack of a roasting tin. Roast at 170c for 25 minutes,
remove string and crave.
